A Rather Fancy Celebration Dinner
I’m making a celebration dinner tonight for Andrew. He got a full-time job! He had the options of being taken out to a nice dinner or having a nice dinner cooked for him. He chose the latter [I don’t blame him; I’m becoming a pretty good cook].
I went to Trader Joe’s with the idea that I would be making roasted chicken with veggies, but that sounded so boring. We haven’t had seafood in so long, so I had to start with a completely clean slate - AT the grocery store. That was a bit stressful, but I think it’ll be just fine:
- Baby spinach salad with white peach slices and soy-ginger vinaigrette
- Oven-steamed salmon with fresh rosemary and thinly-sliced lemon
- Mushroom risotto
- 2 bottles of Chardonnay [very important]
- and Mochi ice cream balls coated in dough? They seemed interesting.

I’m so excited! I mean, for him getting a job. Dinner will be excellent, too!
